Pastor Dave’s Sopapillas

 

2 Cups flour

½ teaspoon salt

2 teaspoons baking powder

1 Tablespoon crisco

¾ cup water

 

 

Mix, knead, rest 30 minutes.

Roll, cut, fry in 375 degree oil, eat.

Serves one.

Pastor’s Pancakes

1 C Flour

½ teaspoon Salt

½ teaspoon Baking Soda

1 teaspoon Baking Powder

2 teaspoons Sugar

½ Teaspoon fresh grated Nutmeg

2 Eggs

1 Cup Buttermilk

2 Tablespoons melted Butter

½ teaspoon Almond Extract

½ teaspoon Vanilla Extract

 

Mix together dry ingredients. Separate eggs. Whip egg whites. Mix together wet ingredients, except egg whites. Mix together dry and wet ingredients, then fold in whipped egg whites. Don’t mix too long or the pancakes will be tough. A few lumps in the batter is OK. Pour batter into hot pan. Flip only once after bubbles start to break.

 

Beginner level: Pour batter for 3” pancakes. Easy to flip.

Advanced level: Pour batter to cover the entire pan bottom. Challenge to flip, but these monster pancakes are worth the effort.

 

For Pastor Dave’s Hawaiian Vacation Stuffed Pancakes, try this: stir into the mixture chopped bananas, chopped pecans and shredded coconut. Or how about Choclate Chips? How much? Pastor Dave’s Breakfast Mess

 

Cook Hash Browns. Cook Bacon. Cook Sausage. Mix together, add anything else that might taste good. Crack some eggs over the resulting mess. Heat until eggs are almost cooked. Salt and pepper to taste. Add hot sauce or salsa if desired. Add your favorite cheese. Wrap in a tortilla if you don’t have utensils. Eat. Enjoy. Play Ping-Pong.

 Ultimate Chili Dog Recipe

 

1.   Mix a bunch of stuff together until you get a chili dog.

2.   Eat

3.   Burp

Chili Dog Recipe for “Others”

Chop Onions

Cook Onions (on high)

Cook Meat (on high)

Add Onions to Meat

Add Cholula Powder

Grind in some Chipotle

Open 1 can Tomato

Add Tomato

Open and Drain 2 cans Beans

Add Beans

Add Chili Powder

Add Cumin

Add Salt

If needed, add water, 1 more can Tomato and Beans.

Do this until it tastes good (Important!)

Cook Hot Dogs

Put Hot Dog in bun

Add Chili until you can’t see the Hot Dog – or bun

Add Cheese and Onions

Add any other stuff (edible) you can find in the kitchen until your Chili Dog is what you consider “ultimate”

Eat

Burp

 Pastor Dave's Biscuits & Gravy

Biscuits

 

3 Cups Flour

4 teaspoons Baking Powder

¼ teaspoon Baking Soda

¾ teaspoon Salt

¼ stick Butter

½ Cup Shortening

1 Cup Buttermilk

 

Heat oven to 400. Mix dry stuff. Cut in butter and shortening. Mix in buttermilk until it all just comes together, then stop! Knead gently for only 32 seconds on floured surface. It won’t look done, but it is! Press the dough flat to 1 inch. Cut biscuits (a cup with a 3 inch opening works fine) and place just touching each other on a pan. Poke the middle of each biscuit. Bake for about 15 minutes. Proceed to gravy.

 

 

Gravy

 

Sausage

¼ to ½ Cup Flour

2+ Cups Milk

Salt

Pepper

 

Cook Sausage. Remove most of sausage and all but about 2 Tablespoons of sausage fat. Add flour and whisk around for about 3 minutes. Remove from heat and slowly whisk in milk. Return to heat whisking frantically until it thickens. Add sausage and grind in a ton of pepper. Salt to taste. Pour biscuits. Enjoy. Play Ping-Pong.

 2 Eggs

2 Cups Milk

2 C Flour

4 teaspoons Baking Powder

½ teaspoon Salt

4 Tablespoons Butter (…mmmmmm…Butter…)

 

Heat waffle iron. Divide eggs. Whisk egg yolks into milk. Add flour, baking powder, salt and mix just until blended. Melt butter, add to mixture. Beat egg whites until stiff. Fold into mixture. Put one cup at a time into hot waffle iron. Eat. Enjoy. Play Ping-Pong.
